My Personal Suggestion
I would absolutely suggest staying overnight if you can. Many people stop briefly on the way between Athens and Thessaloniki, but the atmosphere changes completely once the day visitors leave. Morning coffee in Litochoro with Olympus in front of you feels peaceful in a way that is hard to describe.
